Green chile at breakfast? Now the burrito has something to prove.

Virginia breakfast counters take that idea in more than one direction. Sometimes the heat comes from Hatch chiles. Elsewhere, it shows up through salsa, queso, or a smoky pepper tucked into the filling.

That means the first bite can change quite a bit depending on where you stop. Eggs and potatoes may keep things grounded, but the chile decides how much personality the burrito brings.

A few are built for an everyday breakfast run. Others wait for brunch.

Either way, if your morning needs a little heat, these burritos know where to start.

A house-made flour tortilla holds fried potatoes, eggs, Hatch green chiles, salsa roja, and cheddar cheese in one of Richmond’s green-chile breakfast combinations. Protein can be added, but the chile, potatoes, eggs, salsa, and cheese remain the core of the burrito.

The Smoky Mug serves that burrito from its North Avenue cafe, where breakfast runs Monday until noon and Tuesday through Saturday until 11:30 a.m. Sunday shifts to brunch from 9:30 a.m. to 2:30 p.m.

The current cafe menu also includes breakfast sandwiches and house-made pastries.

The house-made tortilla also distinguishes the burrito from quick breakfast options built around packaged wraps.

Hatch green chiles also appear on the breakfast sandwich. In the burrito, fried potatoes sit with eggs and cheddar, while salsa roja adds another pepper-based component.

The cafe and barbecue operation moved into its current North Avenue space in 2025. Breakfast remained part of the larger setup, and the burrito stayed on the menu after the move.

The restaurant also offers the same breakfast ingredients in bowl form for anyone skipping the tortilla.

Cafe service includes breakfast burritos, sandwiches, pastries, and coffee during the morning. Texas-style barbecue service begins later on its scheduled days.

The breakfast sandwich uses egg, cheese, and Hatch green chiles on a choice of bread, with optional proteins and add-ons. It sits alongside the burrito and breakfast bowl during the cafe’s morning service.

You can order the burrito without added meat or choose an available protein. Either way, the Hatch green chiles stay inside the house-made tortilla with the eggs, potatoes, cheddar, and salsa roja.

Bristol takes a different route by putting pork green chili directly into the burrito. The current Green Chili Burrito combines a hash brown, egg, cheddar, and pork green chili, all on an all-day breakfast menu.

Cast Iron Cafe is a family-owned drive-thru rather than a conventional sit-down dining room. Breakfast and lunch are built for pickup through the drive-thru, and the menu keeps its breakfast items available throughout the day.

The regular burrito uses hash brown, egg, and cheddar, while the Green Chili Burrito adds the pork preparation to that same foundation.

The drive-thru format suits commuters, while the all-day breakfast menu removes pressure to arrive early.

Pork green chili is part of the filling itself, alongside the hash brown, egg, and cheddar. The cafe also serves breakfast sandwiches, bagels, biscuits and gravy, pastries, wraps, paninis, and specialty drinks.

Fresh breakfast service begins early. Monday through Friday hours run from 6 a.m. to 3 p.m., and Saturday runs from 7 a.m. to 3 p.m. Sunday is closed.

The same all-day breakfast section includes a croissant sandwich with bacon, ham, or sausage, egg, and cheddar; an everything-bagel sandwich with the same protein choices; biscuits and gravy; and fresh-baked pastries.

The Green Chili Burrito stays alongside those standards.

Weekly specials can appear beside the regular menu, while the Green Chili Burrito remains on the all-day breakfast section.

You do not have to catch a narrow breakfast window for the burrito. Egg, cheddar, hash brown, and pork green chili remain available during the cafe’s regular service hours.

Short rib takes the place of the usual breakfast sausage or bacon in this Richmond brunch burrito. Scrambled cheesy eggs, breakfast potatoes, pickled onions, pico, and green chile queso join the beef inside Lillie Pearl’s Short Rib Breakfast Burrito.

The burrito belongs to the weekend brunch menu rather than weekday breakfast service. Saturday brunch runs from 10 a.m. to 3 p.m., and Sunday brunch follows the same schedule.

The restaurant also serves lunch and dinner during the week, but the short-rib burrito is tied to those weekend brunch hours.

Green chile appears through the queso alongside short rib, eggs, potatoes, pico, and pickled onion.

Other brunch dishes include bread-pudding French toast, biscuits, cheesy grits, breakfast potatoes, and egg-based plates. The short-rib burrito sits alongside them on the weekend brunch menu.

The weekend menu also includes shrimp and grits, a Southern Breakfast Bowl with cheesy grits, breakfast potatoes, eggs, and bacon gravy, and a Country Boy Benedict built on a cheddar biscuit. Those dishes share the same Saturday and Sunday brunch window.

Chef Michael Lindsey and Kimberly Love-Lindsey operate the restaurant, which is named for Lindsey’s grandmother Lillie Pearl.

The current Brook Road location has upstairs and downstairs dining areas, and the restaurant relocated there from its earlier East Grace Street home.

The move from East Grace Street to Brook Road gave brunch guests both upstairs and downstairs dining areas.

For the burrito itself, the ingredient list stays clear: short rib, scrambled cheesy eggs, breakfast potatoes, pickled onions, pico, and green chile queso.

Scrambled eggs and tater tots start the breakfast burrito here, then cheddar cheese, black beans, and green chili salsa fill out the flour tortilla. A vegan version is also available, using seasoned tofu in place of the regular egg-and-cheese build.

Breakfast and lunch are served Wednesday through Sunday from 9 a.m. to 2:30 p.m. The morning menu also includes pastries, avocado toast, rotating frittatas, and biscuit sliders, while the market side operates in the same historic schoolhouse property.

At Blue Atlas Restaurant and Market, black beans and tater tots sit inside the tortilla with scrambled eggs and cheddar. Green chili salsa is included in the standard build.

The vegan burrito changes the center of the meal to seasoned tofu, tater tots, green chili salsa, and black beans. That version keeps the chile and potatoes while removing the eggs and cheddar from the regular breakfast burrito.

The restaurant’s market also gives you access to baked goods and other prepared foods during breakfast and lunch service. Indoor dining and a community table are available, with outdoor seating offered on the covered portico and lower patio when weather permits.

5. Torchy’s Tacos

Cage-free eggs, refried pinto beans, crispy potatoes, chorizo, mixed cheese, and Green Chile Queso make up the Breakfast Burrito at this Charlottesville taco shop. Everything is wrapped in a flour tortilla, with roja salsa and tomatillo sauce served alongside.

The breakfast menu is served all day, so the burrito remains available beyond the morning hours. Several breakfast tacos share the menu, including Migas with cage-free eggs, corn tortilla strips, green chiles, avocado, pico de gallo, mixed cheese, and tomatillo salsa.

The Charlottesville burrito shares the menu with several breakfast tacos, including Migas and other egg-based combinations.

At Torchy’s Tacos, Green Chile Queso is mixed into the burrito itself. Chorizo and refried pinto beans sit with the eggs, while crispy potatoes and mixed cheese fill the rest of the tortilla. The two sauces arrive separately.

The Charlottesville location sits at Stonefield and is currently open daily. Weekday service begins at 10 a.m.; Saturday and Sunday begin at 9 a.m. The restaurant remains open into the evening, so the all-day breakfast menu continues well beyond a standard morning service.

Other all-day breakfast choices include the Wrangler with eggs, crispy potatoes, smoked beef brisket, mixed cheese, and tomatillo salsa, plus the Ranch Hand with eggs, grilled steak, and mixed cheese. Several simpler egg-and-cheese breakfast tacos are available too.

The burrito brings eggs, beans, potatoes, chorizo, Green Chile Queso, and cheese together in one flour tortilla.

Monstera brings charred poblano peppers and onions to a West Coast-style breakfast burrito in Arlington. Scrambled eggs, jack cheese, crispy potatoes, and smoked salsa verde join them, with a choice of filling available inside the tortilla.

The restaurant operates at National Landing’s Water Park, where breakfast burritos are a central part of the menu. The Crystal Drive location opens at 9 a.m. every day, serving until 3 p.m. Sunday through Thursday and until 8 p.m. Friday and Saturday.

The regular Breakfast Burrito can be ordered with fillings such as bacon, chorizo, grilled chicken, beef barbacoa, or cumin-rubbed eggplant. Eggs, crispy potatoes, jack cheese, charred peppers and onions, and salsa verde remain the common structure around whichever filling you choose.

There are several related burritos on the current menu. The Sun Up Burrito combines scrambled eggs, braised pinto beans, jack cheese, crispy fries, charred peppers and onions, and salsa verde.

Other burritos add rice, beans, avocado, or additional toppings while keeping peppers and salsa in the mix.

Monstera offers related burritos beyond the standard version, including Sun Up and Super Breakfast builds with different additions.

The Super Breakfast Burrito adds sour cream and salsa fresca to eggs, jack cheese, charred poblano peppers and onions, and crispy fried potatoes. Filling choices across the burrito menu include chorizo, bacon, barbacoa, chicken, eggplant, and meatless builds.

The poblano peppers are charred before joining the eggs, potatoes, cheese, onions, and salsa verde.

You can keep the regular breakfast build simple or add one of the available proteins, with charred peppers and onions staying part of the tortilla either way.

Green chile has been part of this Northern Virginia restaurant family since the beginning. Anita’s opened its first location in 1974 after the founding family moved from Albuquerque, bringing recipes built around New Mexico red and green chile to Virginia.

The green sauce starts with chiles harvested while still green, while peppers allowed to ripen become the base for the red version. The company remains family-owned and operates multiple Northern Virginia locations.

At the Fairfax location, several current breakfast burritos specifically use green chile instead of the red chile found in many of the standard breakfast combinations. The BB Veggie wraps grilled mixed vegetables, eggs, cheese, potatoes, and green chile in a flour tortilla.

Another option, the BB Popeye, combines spinach, eggs, home fries, green chile, and cheese. The BB Machaca can be ordered with a choice of chile and adds shredded beef or pulled chicken, scrambled eggs, home fries, cheese, and chives.

There are egg-free choices too. El Verde uses spinach, mushrooms, bell peppers, onions, potatoes, and green chile, while the BB Vegano combines vegan chorizo crumble, potatoes, and green chile. Anita’s current green chile is made from New Mexico Hatch chile.

Breakfast starts especially early in Fairfax. Monday through Saturday service begins at 5 a.m., while Sunday begins at 5:30 a.m. The location remains open through lunch and dinner.

The BB Popeye can also be ordered as a platter smothered with green chile and cheese, and the menu sells green chile separately as a side. The Fairfax location identifies its green chile as made from New Mexico Hatch chile.

You can choose vegetables, spinach, meat, or a vegan filling while keeping New Mexico green chile inside the tortilla.

Anita’s also sells green chile separately as a side, offering another way to add its Hatch chile preparation to breakfast.
