This Tennessee Tamale Shop Started With A Tricycle And Became A Local Favorite

A tricycle started this Tennessee food story. Yes, really.

Before the permanent storefront, before the regulars, and before the wider menu, there was a much simpler setup rolling through Knoxville.

That unusual beginning is still part of what makes the shop worth knowing. The business grew without losing the straightforward approach that first got people interested.

Tamales remain the main event, with different fillings and take-home options keeping things flexible.

Who knew three wheels could lead this far?

A Tricycle Started The Good Golly Tamale Story In Knoxville

Good Golly Tamale made its debut in September 2013 at the Market Square Farmers’ Market in Knoxville.

The original setup was hard to miss. An ochre-colored tricycle carried a hot box on the back, allowing individually wrapped tamales to stay warm while they were sold at the market.

Matt Miller and Chris Watson founded the business, beginning with that mobile setup before the company eventually moved into a permanent storefront.

The tricycle gave Good Golly Tamale a practical way to start small. Instead of opening a full restaurant immediately, the business could serve customers directly at one of Knoxville’s busiest local markets.

That early format also shaped the identity that still surrounds the shop. Tamales are naturally portable, individually wrapped, and easy to serve one at a time, which made them a natural fit for a market cart.

If you visit the Old City storefront today, it is easy to forget how compact the operation was at the beginning.

The permanent shop has more room, a broader menu, and frozen options for take-home orders, but the business still keeps a connection to its original market setting.

That makes the tricycle more than a colorful detail in the story. It marks the point where the whole operation began.

Before the Old City storefront opened, Market Square Farmers’ Market gave Good Golly Tamale its first public home.

The market setting matched the business well because the food could be prepared, wrapped, kept warm, and handed over quickly from the tricycle setup.

Market Square also placed the tamales alongside produce, baked goods, prepared foods, and other local vendors, giving the young business a place inside Knoxville’s broader market scene.

The shop still points visitors toward its cart at the Market Square Farmers’ Market, keeping that original connection active.

If you want to experience the business closer to the way it began, the market cart gives you that option when it is scheduled to appear.

Vendor schedules can change, so checking the current market lineup before making a special trip is useful.

The storefront, however, gives you a fixed location six days a week.

That combination creates two ways to find the tamales in Knoxville. You can visit the permanent Old City shop or look for the cart during the farmers’ market season.

For a business that started on three wheels, having both options keeps the original format visible while giving you a dependable place to visit year-round.

Good Golly Tamale moved from a market-only operation to a permanent storefront in October 2015.

The shop opened at 112 S Central St in Knoxville’s Old City, where it continues to operate in 2026.

Current regular hours run from 11 a.m. to 8 p.m. Monday through Saturday, with the shop closed on Sunday.

That schedule gives you a wide window for lunch, an early dinner, or a quick pickup later in the day.

The storefront also expanded what the business could offer beyond hot tamales served from the cart. You can now choose from the regular menu, pick up sides, order larger quantities, or take frozen tamales home.

The Old City location puts the shop within a walkable part of downtown Knoxville, making it easy to combine a meal with other stops nearby.

If you are planning a visit, the address is simple to remember: 112 S Central St, Knoxville, TN 37902.

The move from tricycle to storefront did not erase the market chapter. Instead, the permanent shop added another way to access the same tamale-focused business.

You can still see both parts of the story in the way Good Golly Tamale operates today.

Organic Corn Masa Forms The Base Of Every Tamale

The masa is one of the most clearly defined parts of Good Golly Tamale’s ingredient approach.

The shop uses organic, non-GMO corn masa as the base for its tamales.

That masa is paired with fillings built from a mix of meat, vegetables, cheese, and plant-based ingredients depending on the variety you choose.

The business also uses locally sourced free-range meats and locally farmed produce when available. Its ingredient information also notes organic palm shortening, locally sourced leaf lard when available, and Benton’s bacon fat in some meat tamales.

Those details matter because tamales are simple in structure. Masa surrounds the filling, so the quality and composition of the dough affect every variety on the menu.

If you avoid meat, there are vegetarian and vegan options. If you eat gluten-free, the tamales are naturally gluten-free, although the restaurant does not claim gluten-free certification for every ingredient it uses.

That distinction is important if you have a medical need for strict gluten avoidance.

The shop also notes that its sides are vegan, giving you additional plant-based choices alongside the tamales.

You can build a meal around one or two tamales, add sides, or order a larger combination when you want to try several fillings.

The regular tamale lineup gives you several directions to take your order.

Current permanent varieties include Classic, Chicken Tinga, Queso Poblano, and Vegan Soul.

The menu also rotates through additional and seasonal choices such as Curry Chicken, Pulled Pork, Chorizo, Bean and Cheese, Egg and Cheese, Purple Pig, Calabacitas, Butternut Squash, Lamb, and Veggie Pot Pie.

That mix gives you options whether you want meat, cheese, vegetables, or a fully plant-based filling.

Chicken Tinga brings a familiar savory option, while Queso Poblano keeps things vegetarian. Vegan Soul gives you a plant-based choice without leaving the tamale format behind.

Calabacitas and other rotating varieties add more vegetable-focused options when they are available.

Because some flavors are seasonal or special offerings, the exact selection can change. If one specific tamale is the reason for your visit, checking the latest menu before you go can save you from guessing.

The menu works well for sharing too. Ordering several different tamales lets you split them and compare fillings without committing the whole meal to one flavor.

If you prefer a simpler order, pick one permanent variety and add a side.

Either way, the format stays easy to understand.

Beans, Rice, Curtido And Collard Greens Round Out The Meal

Tamales are the main attraction, but the side menu gives you a few ways to make the meal more substantial.

Current sides include black soup beans, Spanish-style rice, curtido, and collard greens.

Curtido is a cabbage-based accompaniment that brings a different texture to the plate, while beans and rice give you familiar additions that pair easily with nearly any filling.

Collard greens add another option if you want something vegetable-based alongside the tamales.

All of the shop’s sides are vegan, which makes it easier to build a plant-based meal without having to sort through a long ingredient list at the counter.

You can keep the order light with one tamale and a side, or combine several tamales with beans, rice, greens, and curtido if you are sharing.

The sides also help if your group is ordering different fillings. They give everyone something in common to pass around while the tamales stay individualized.

If you are trying Good Golly Tamale for the first time, ordering two different tamales and one or two sides gives you a broader look at the menu without making the meal complicated.

The whole setup stays casual and flexible.

Frozen Tamales Let You Take The Shop Home

Good Golly Tamale also sells frozen tamales for meals beyond the storefront.

The shop keeps vacuum-sealed frozen two-packs available, and larger orders can be arranged hot or frozen.

Half-dozen and dozen quantities are available with advance ordering, making it easier to pick up enough for a group or stock the freezer.

Frozen two-packs are also available through Market Wagon delivery, extending the shop’s reach beyond a walk-in visit.

If you take frozen tamales home, the shop recommends thawing them in the refrigerator before reheating. They can then be warmed while wrapped in foil in a conventional or toaster oven.

That gives you a straightforward way to keep extras for later without changing how the tamales are packaged.

The frozen option is especially useful if you are visiting Knoxville from out of town and want to bring more than one meal home.

You can eat a hot tamale at the shop, then pick up a few frozen packs for another day.

Between the storefront and frozen packs, the business now operates in several ways while keeping the same tamale-centered focus that started in 2013.
